Does this qualify as an "Educational Prep Program"?

I’m currently working on an economics paper with a PhD student at UCI, and I want to include that in my application. However, I ran out of room in my “Extracurricular Activities” section. The Educational Prep Program section does mention that a special research opportunity qualifies. However, I’m not exactly part of a “program” per se. We have lunches together, work, and are currently building a simulator to run an experiment.

Can I include this in this section? As long as I specify in the description section that I’m working with one student?

I have an Amazon Kindle e-book on using Roman and Greek philosophy in the stock market. I earn money from sales of the e-book. So, can I include this under, “work experience” and then move the research I’m doing to the extracurricular section?

My only concern with the second option is that I’m not technically “employed”. I have to give some of my earnings to Amazon, but I did it all myself.
