would it be very difficult? how useful would a double degree in math/econ be vs a business/econ degree?

also how is a business/math degree compared to an econ/math degree?

Useful for what? A business/math degree or an econ/math degree with respect to what? I don't quite understand what you're trying to get at here. What do you want to do? What are your career aspects? Have you researched the major requirements? How have you performed in math and econ courses in the past? What are you taking right now? You give us absolutely no information to adequately answer your questions.

i was like you until i realized doing both is useless plus very tough, upper division math courses are really time consuming and you really gotta have the motivation, just speak to the applied math adiviser and hear for yourself, econ is more broad- more flexible courses can be taken to fullfill upper div requirements

You don't pick math as a major. You don't say, "gee, I'd like to major in math". Math picks you. It is an appropriate major only for someone both really interested in the subject and extremely good at it.

i agree with kenf
