I am currently a high school junior, but I am starting to map out my college plan because I am a dual enrollment student on track to earn my AS before I finish high school.
But my question is this: I LOVE English and I LOVE math. I am planning to become a secondary teacher and want to teach both. Should I double major in Teaching Secondary Math (yes, that is a major at my school) and Teaching Secondary English? Or should I major in math OR English and minor in the other one?
I’d suggest the Math or English degrees without the teaching emphasis. It will generally attract students who are more competitive and intrinsically interested in the subject. You will anyways have to do an MAT in education if you become a teacher and will learn teaching skills there, as well as through student teaching…
I’d suggest single majoring in the subject you’re more interested in and taking courses in the other subject of your interest. That way, you’ll get more depth as well as a higher likelihood of doing an honors thesis in your area of interest without going through the whole requirements chain of both majors.
Check your state’s Board of Education (or whatever it is called in your state). Not every state requires a MAT. Some schools offer teaching certification at the bachelor’s level. Also, look at Middle School endorsement requirements in your state. You might be able to get enough credits to do one as a middle school subject.
If you are planning on transferring your AS to a 4 yr institution, some colleges/universities give you credit for all the gen ed requirements.

@MerryLee is correct-you may not need an MAT in the state where you want to teach. It varies by state, and most do NOT require one. My D is a sped major, but at her college and some others she looked at, students interested in a "regular "teaching career choose a traditional liberal arts degree PLUS education courses. They graduate with all the typical education preparation, take the Praxis, and do student teaching, but their degrees are not in education. You might look at LAC that offer this, so you could have your math or English major and still get your teaching certification.
