How difficult would it be to double major in Social Science and Environmental Science?
It depends on how much time you want to take to complete the two programs. If you are aiming for 4 years it can mean some heavier loads and summer school without significant AP credit.
Would it be possible to do along with ROTC?
You just need to look at the curricula and speak to an advisor. The good thing is that you don’t have to declare it right away. You can start with one, talk to your advisor and make a decision after a year or so of seeing how you are handling the course load.

It’s theoretically possible to be able to do it with ROTC, but if your unit requires Army/Navy/AF/MC classes, that’ll cut into the time that you can use for soci or enviro classes. Also keep in mind that ROTC is already a huge time investment, and that’ll cut into study time.
That said, it’s possible! A guy in my unit is doing a mathematics and statistics double major. You just need to plan it right.
You can do a major like environmental studies, which often offers a track focused on social science aspects, such as environmental economics and policy. It usually includes some core courses in natural science aspects as well.
Sometimes, a major like international relations/international studies includes a track in environmental aspects of international relations (often combined with a focus on international development). That typically includes less focus on the natural science aspects.
