How hard is it to double major, I plan on attending Cal State Channel Islands and double majoring in Health Science and Nursing. By “hard” I mean how many classes would I have to take, how much workload will I have, will I have enough time for all my classes pertaining to the two majors etc.
It depends entirely on the requirements of the particular college. Check the school’s website for both majors and well as for any core curriculum/distribution requirements.and it should be pretty clear. If ti si too much you can consider taking a minor in one of the areas or just taking courses you are interested in outside of your major.
Its generally very difficult to double major as a nursing major, due to the number of required courses and the sequencing.
Normally, the closer the majors are to each other, the easier it would be (relatively) because of the overlap in requirements. However, as @guineagirl96 points out, the nursing major may have very specific courses that have to be taken in a specific order that may make the other major difficult to impossible. Check the school’s website for more info.

You can see if the non-overlapping courses in the second major will fit into your free elective space around your first major. But given that the nursing major has very little space for free electives (none are listed in the roadmap, although you may be able to fit in a few in the 12 unit semesters), the chances of being able to do that without heavy overloading look slim.
I wouldn’t bother trying to double major in health science and nursing - nursing is already so demanding, but since nursing IS a health science it seems like a lot of effort for very little reward.
