How long would it take to double major in chemical engineering and mathematics? Would that be beneficial at all with employers? Is it even necessary to have a double major with engineering?

That depends on your curriculum requirements, number AP credit you received credit for, and oveloading you schedule.

My S will be a senior this year doing engineering and economics (and a minor in business) and will finish in four years. Looking back, not sure it was worth the time and effort (other than self satifaction) but decided to finish the double major. He had AP credits and took one extra class for 3 semesters. The extra class took away time that can be spend elsewhere and probably affected his gpa (dropped by as much as 1/2 a point in one semester from freshman year). The double major did not seem to impress interviewers for summer internships who were looking more a gpa than curriculum and the number of credits completed. He did get summer internship for engineering but nothing in economics. He will probably end up in engieering upon gruduation as he like it better and will probably get pay more.

My opinion, unless you can maitain high gpa doing two degrees, concentrate on one and do well on it. Also if you have to add more time to complete both degrees, I do not think its worth it.
