Drop in one, improvement in two. Will this look bad?

April: 770 CR 720 M 710 W

However, after taking this test and accidentally leaving about 5 (OUCH) CR blank, I'm nervous. It's not that I slacked, I just ran out of time after spending too much time on a question. I'm predicing my CR will drop to the high 600s or low 700s, while my math and writing will increase 20-60 points each. Will it look bad if my score for CR is only low 700s or high 600s after a really good CR score, or will colleges truly only take the highest one-sitting score/highest scores per section?

They look at your best scores in each area.

By exactly what standard is 680 CR a bad score? 770CR/720M/710W is excellent to begin with. 680CR/760+M/740+W is excellent as well. I somehow doubt that you have anything to worry about!

It's not so much that I think the scores are bad, it's more that a drop of 770 to 680-720 might look bad. So I have nothing to fear?

680-720 is not too far out of the score range of a 770. It would probably be a better idea to work on improving other parts of your application.
