I am going to be a senior this year, and my schedule is a bit stressful.
My classes are:
AP Calc AB or BC (haven't decided)
AP Chemistry
AP Physics C
AP Econ/AP Amer. Gov.
AP Spanish
AP Literature
I have to drop a class because of the workload and to study SAT and SAT Subject Tests. However, I do not know what class to drop? I want to drop Lit and/or Amer. Gov. But, I do not want to ruin or lessen my chances for acceptance at good colleges. Help?

If you want to pick out of just those two, I would drop Literature. Government is very interesting and a fairly easy course (at least at our school). Literature (once again, for us) consists of a large amount of, of course, literature that is very time-consuming in both the reading and the writing.

You’re a senior and by the beginning of 2015 (or even before then) you’re going to start caring A LOT less about school and your classes. Right now, I think you need to focus on your strengths. When you get down to studying for the SAT or subject tests you don’t want to worry about having to spend extra time on an AP class because it’s not a subject that you’re good at. When you have to study for midterms, finals, and the AP exam you don’t want to be super stressed out about an AP class because it’s your weak point. You’re going to be a senior and you don’t want that kind of pressure because high school is looking less and less important to you as college becomes closer. My advice: get rid of a class that you know is going to cause you to struggle. If dates aren’t your thing, drop AP Gov. If English class has always given you a hard time, drop AP Lit. It will save you from some stress when senioritis comes around.
