EA or RD for Stanford University

I'm trying to decide if I should do EA or ED for Stanford. It really is my dream school so applying early action makes sense. I believe I have good stats and solid extracurriculars, but my only concern is that I won't have my subject test scores by the time the Early Action application is due. Here are my stats:
SAT: (kind of low) 2030
ACT: 34
GPA: 4.0 unweighted, 4.43 weighted
Extracurriculars: Model UN (VP, Pres), Academic Decathlon, Science Olympiad, Service Club (Treasurer, VP), Interact Club (Secretary, Pres), Piano, Hospital Volunteering, Pharmacy Internship, Russian Lessons, CSF (Secretary, VP)
Lots of school leadership
I have had 3 different jobs and I started my own fruit and produce business.
Essays are some of the best I've ever written, solid recommendations.
5s on all of my AP tests.
I am a National Finalist for the Nordstrom Scholarship Competition (I don't know if that helps, but I'm thinking it might since it would just show that someone else liked me).

The only issue is that I won't have SAT IIs in time for submission. Is this a problem? Stanford says they aren't required but obviously they wouldn't hurt either.

SAT2 is optional for Stanford and you only submit the scores if they are good. You do have good GPA and ACT score. How likely are you getting great scores (near at 800) on them? If your practice scores indicate you may be getting below 750, don’t wait for the subject test score and do REA.

Are there any other private schools that you would otherwise want to apply EA to but won’t if you apply to Stanford REA?

I’m looking at applying to a couple ivies but many require subject tests. Yale doesn’t, but I’m still leaning towards Stanford. As for practice tests, I’m taking math 2, bio, and us. I’m not sure what I would get but I think id get at least 740 on each

You do know you need to submit that SAT score, too. Right?

^^Don’t worry…Stanford will use your TOP scores whether they are ACT or SAT…and your ACT 34 which is stellar will trump your SAT 2030. Good luck!

So based on this you guys are recommending that I apply early?

Since you are a very competitive applicant academically from California along with being a finalist for the Nordstrom Scholarship…your best shot at Stanford is doing REA. I would not wait for regular decision to apply…it will be your essays and recommendations that will determine whether you get in or not (the intangibles)…not your grades. Good luck!
