Another good substitute for Gorgonzola is goat cheese. But really I think the cheese should be on the side, so that the vegans as well as the Gorgonzola haters can be happy! The Cosi salad looks great otherwise. I do have a friend who can’t eat spinach because of gout, but I don’t think that’s as common (at least among my friend group) as the vegans.
This group eats just about everything, but I am bringing the ingredients in individual containers to dump together at the end. We’ve had blue cheese salads before, but if it turns out someone hates Gorgonzola, I will mix all but that, put some aside, and then put in the cheese.
I just listened to a show (Splendid Table) on my local public radio station about salads. The host interviewed a woman (she was Martha Stewart’s personal salad chef), who has a new book called Salad Freak. The recipes she discussed sounded great. She’s a big proponent of using salad ingredients that are in season; I’m buying the book!!
I have to say dried cherries are a winning ingredient for a pantry. I LOVE them on salads. But also in my oatmeal, etc.
The Cosi Salad was a hit and there was not one bit left.
I just ordered Salad Freak, thanks for the recommendation. Another book I really like is Mandy’s Gourmet Salads but the recipes can get a bit involved - as in there are lots of components that are recipes on their own!
