So I know Economics isn't a business major, but oh well.

So I'm aware that if you go to an average school for Economics you won't be the most prospected graduate, but if I were to double major in Economics and Applied Mathematics while being in the honors program, would that help dramatically with finding a job after I graduate?

I've heard from dozens of people that an Econ degree is good and from dozens that it is a bad degree.

How's the career outlook? So basically chances of me getting a job once I graduate.

I'm planning on going to Illinois State if that helps.
