ED Chance

What are my ED chances. I know my rank's a bit low, and not taking all the AP tests might hurt. I'm Asian and from Texas.

GPA - Unweighted: it depends on the scale but on the tougher one where a 90-93 isn't a 4.0 it's a 3.77
on the one where 90-100= 4.0 it's a 3.85
Class Rank: 8/118 around top 7%

Scores:

SAT I Math: 770
SAT I Critical Reading: 790
SAT I Writing: 690

1560/2250

790 USH SAT 2
710 Literature

I had 5 AP classes available to me freshman through junior year. I took 4 of them and took the test in 2 of them.
5- Apush 4- AP lit

Extracurriculars (my weak part)

Jiu Jitsu freshman and sophomore year
JETS (Engineering Club) junior and senior year
Engineering competition team junior and senior year
Spanish Honor Society junior and senior year
Interact Club junior and senior year
Red Cross Club junior and senior year
spanish honor society junior and senior year
nhs junior and senior year

Leadership positions:
Co-founder/Vice President of my schools Spanish Honor Society

300 volunteering with poor people in my parent's home country ( done the summers of my freshman and sophomore year)

100 domestic (50 hospital, 50 domestic)

Oh, and a 34 ACT. The ECs I was in, I really got involved in. Engineering took a large chunk of time my junior year, and jiu jitsu was 4-5 days a week my freshman and sophomore years.

Anyone at all?

Your SAT and ACT are fine. Your ECs, though like you said, is not impressive. I see that you only started during junior year, which will reflect badly on your part. (though the volunteering for 300 hours may help a little bit.) Overall, academic-wise, you’re on par, but your ECs will definitely hurt you. I would try to stand out in the essay by writing something unique about you. It’s hard to chance you since you are quite lacking in one area.

Here’s a big thing. I switched high schools after my freshman year ended. I’m going to be a part of my high schools first graduating class, so clubs were only officially allowed to start during my junior year. Also, I did jiu jitsu out of school for 4-5 days a week my first 2 years. I stopped junior year to develop my interests more.
