Electives - easy vs interesting

What should take priority when picking electives - how easy it is or how interesting it is? I'm trying to decide between course A and course B.

Course A I find very appealing, but it's in a subject I have no prior coursework in and it's supposed to be reasonably difficult in terms of essays, memorization, and readings.

Course B I don't find that intriguing, but it's notoriously easy and requires minimum effort.

Should I take something that I'll enjoy but may not do very well in, or should I take something boring that will boost my GPA? And no, there's no course C that's easy AND interesting, I've looked.

I’ve done both at times, depending on what the rest of my semester looked like. When I’m expecting to be busy with other commitments, I choose the easy electives and risk getting bored. When I have time, I am happy to put extra effort into interesting electives.
