I know colleges want to see a variety of electives, but are there any specific course they would want to see?
The best answer to this would simply be “nah”. Do what interests you. Colleges would rather see you shine in what you love than what you believe will impress them.
Most colleges don’t care what you do as long as you do something. Just pick electives that are interesting to you and focus on the things you are passionate about.
