I keep reading on engineering admissions info from UCs that the emphasis is on math and science courses taken and SAT Math scores, but no where do I read anything about extracurriculars, volunteering. I got a 720 on math but only a 2030 overall (reading sucked). Will I still be good enough for most UC engineering programs? (maybe UCLA?) I have a 4.0 UW and 4.5 weighted. I've taken 7 math courses in high school also.

You need to calculate your UC GPA which is capped with 4 AP/Honors classes, see link: <a href=“GPA Calculator for the University of California – RogerHub”>http://rogerhub.com/gpa-calculator-uc/

You look like you are a competitive applicant and UCLA presumably has gone to a more holistic review of their applications so essays and EC’s will have an impact. Although a SAT of 2100+ would increase your chances at UCLA, you do have a chance. I think it will be a High Match/Low reach along with UCSD.
For UCI/UCSB/UCD you look like a Match. UCSC is a low match and UCR a safety.

Good Luck.

Thanks :)

Math subject test matters more. I think UCLA literally adds the math subject test and ranks you.
