I was looking at the ND Engineering website...the curriculum seems to be VERY restrictive and offers less exposure to a broad liberal arts background than do other top universities, such as ivies, which place emphasis on both technical and liberal arts backgrounds for their engineering students. I am interested in engineering, but also in economics. It appears that other than the 1 social science course built into the university's core curriculum, there would be little opportunity to gain a sufficient background in economics or liberal arts in general. Also, ND doesn't offer an econ minor...maybe I am overlooking something but could someone comment on the engineering program at ND?

it is very structured, but depending how much AP credit you have, you could take a lot more econ classes - (the reason why there is no econ minor - and the reason why there isn’t many minors at all - is that everyone at ND would get one or two and this overloads the department). But with ap credit, it is much more doable.
