For undergrad I'm doing engineering/math, but I may want an MBA after that.

I'm likely to go to UC Berkeley's Engineering program, to major in "Engineering Math & Statistics". Every "humanities and social studies" course I take can be economics.

Will the courses I take in that major (lots of math, stat, good amount of econ) be sufficient to go straight to MBA studies without taking additional courses.

Almost any major you take will be sufficient for almost any MBA school without additional courses. Honestly, very few MBA programs have any formal pre-matriculation course requirements.

Your courses should be fine. The MBA profs will like you because you will have a strong math background & will be able to easily relate to their research, something that not all MBA students can do.
