Environmental vs. Molecular Genetics

I'm rather new at this, so bear with me. I have several years until I need to finalize my major but have began looking into it. So far, I have two choices.

Environmetal Studies/Sciences: This is my top. It's what I want to do - primarily Wildlife and Conservation Biology, but I'm totally open to any other options that might serve for a better future. I don't want to say that money is my main concern, but I obviously need a study that will get me a paying job. I'd like to know anything and everything about this major - which selective field of environmental science to go into, how good career outlooks are, which majors and minors to take (should I maybe minor or major in Biology so I don't dig myself into a hole if Enviromental doesn't work out? Should I focus primarily on Biology as an undergrad and then choose a more selective field of Environmental as a grad?). Any information would be greatly appreciated.

Cell Biology & Molecular Genetics: The lesser choice of the two in order of preference for me, but it's a field I want to take in consideration. Again, Biology would be a main factor, and I'd love any opinions on how to work out the minor/major undergrad/grad options there. Careers offered for this is something I'd like to know as well.

Really, anyone who can provide a comparison of these two fields would be great, as well as any guidelines on how to sculpt the years of college study to the greatest advantage.

There are some good jobs in environmental. Molecular biology I have a background in that. Most jobs I see are the same old crap temp lab serf jobs setting up PCR’s and doing DNA/RNA work and there doesn’t seem to be very many period mainly technologist jobs at universities which are known to be low paying and dead end.
