What do you think would be some impressive EC’s for a potential econ. major? I’m aiming for a few top schools (Ivy league, Uchicago etc.).

Do anything you are interested in and can feel passionate about. It is a mistake to do ECs in an attempt to “impress colleges”.
^In addition to this, you may change your mind about your major later on. Colleges are not looking for your activities to line up perfectly with your projected major - they just want to see that you do stuff.
