Extracurricular for a student interested in the Humanities

A lot of people on this subreddit are in STEM fields, and generally STEM seems to have more EC options available (lab work, research, scientific papers, apps/programs, olympiads, etc.) I’ve never really been too interested in STEM but I really want to bolster my ECs for my application to some top schools. Does anyone here have any humanities based ECs that would help me stand out? My interest lie mostly with history, law, and politics.

btw, ecs could include internships and the like since I’m 16+ and have working papers.
