So I want to end up majoring in either biotechnology or organic chemistry. I do have some extracurriculars outside of school. However, though I want to major in the science field, something I am extremely passionate about is music. I currently have a youtube channel with around 100,000 subscribers and because of the channel I have gotten a chance to perform in a few places. The channel is different covers of songs that I have done. How would colleges look at this, if at all?
I’d say to be able to broadcast yourself and your passion on youtube says a lot about your personality as it displays courage, confidence and the ability to do different activities!
I’m no admissions but I’d say they would take this very seriously!

I believe when admissions look at ECs they really just want to look at those fore-mentioned traits I have mentioned.
A student who is willing to go “out the box” as in your case with having a music interest and even broadcasting yourself in front of thousands of people could be excellent candidates that are willing to explore and research. Colleges want researchers and explorers, not those who could regurgitate information.
Sorry for the long and drawn out response. I believe somebody with more experience can steer you in the right direction even though your EC is truly fascinating and very commendable!
It doesn’t matter that it’s unrelated to your major - selective colleges generally value ECs regardless of whether or not they relate to your major. A large amount of students receive their degree in an area other than their intended major anyways. This might be a way to distinguish yourself from other applicants or present as a less one-dimensional applicant.
Make sure to convey it compellingly in a way that shows your passion/interest. Also ensure that your grades, test scores, etc show your ability to succeed in the science field if your ECs don’t relate.
