NOTE--Everything I write is based on info before the current economic crises, i.e. based on last and prior years graduating class(es).

Accounting always seems to be in demand. If you go to a school with an accredited accounting program (150 credit hours required, i.e. 5 years in most, if not all, states at this point) and do well, at least a 3.0 or higher GPA, you can get a job. Of course, you will have to pass the CPA exam.

I work at a SUNY school with a professional accounting major. Our top majors have gotten offers from the top 3 (of 4) accounting firms for the last few years at the beginning of their senior year. Starting salaries have usually been around ( + or - a few k) $60,000.

They look for students with a high GPA and EC's. They want well rounded students with interests outside of acedemics. Join the Accounting Club, play extramurals, etc.
