I've had the chance to speak to an advisor before, and it seems like they value Berkeley courses more than non-Berkeley ones. So, would it be stupid to use AP credit to get out of a class like Econ?

People do that all the time, so its nothing special. That said, haas does need something to base your grades on, so if you AP out of 1 semester of calc, 1 semester of econ, and take stats and ugba10 during the second semester of your soph. year, the only class they will see on your transcript is 1 semester of math, which is not nearly enough to base your decision for admittance on.

I’m not sure if Haas negatively looks down on the applicant that passes out of, or waits until his/her sophomore spring semester to take, most or all of the pre-requisites. That being said, there is the chance that they would look suspiciously about deferring the pre-reqs to the fourth semester, so if you do have to take particular classes for Haas, you may want to just consider strategically choosing which ones to take within those first 3 semesters (i.e. the grades in which will be considered by Haas).

Also, you may want to consider the pre-reqs for your back-up major, especially if you are looking into, say, a technical major with extensive math requirements.

I think as an alternate major I would maybe like to pursue something like the math path for econ or statistics…those require higher math than Haas requires. If I take those prereqs and end up with a slightly lower grade, maybe B+ or so, would that really hurt me in admissions? It seems they don’t care so much about what class you take, as an A in 16B would be the same to them as an A in math 53 or 54, but certainly 53 and 54 are harder. What is the best thing to do here? If I don’t make Haas, and I want to pursue econ, I will definitely need the quantitative classes, so it seems like I have to take 53 and 54 regardless.

They also recommended saving stat for the 4th semester because it tends to be a hard class…but then the only pre reqs they will actually see are UGBA 10 and math, and english (if they care about it).

Is it stupid for me to skip out of econ?

If you really like math, then you may find majoring in math and/or economics to be more interesting than UGBA. In any case, if economics with math is your alternate major, then you pretty much have to take Math 53 and 54. And if you are considering economics with math, then it is likely that math and statistics courses are not as hard for you as for a typical UGBA major or hopeful.

I thought that Economics 1 was almost a waste of schedule space after completing Economics 101A and 101B, although it was a reasonable course to take for someone who just wanted a single introductory economics course. If I did it over with hindsight, I would have just taken Economics 101A and 101B without Economics 1 (I was not an Economics or UGBA major, so was not constrained by major requirements here). If you have a 5 on both AP Economics tests, you might as well skip Economics 1 (actually, the Economics major allows skipping with a 4 on both AP tests, though UGBA requires a 5 on both AP tests to skip) and go directly to Economics 101A and 101B.
