Would a top Ivy League college much rather see me starting a new language junior year (Spanish 2) or taking an AP class? If AP class is the answer, should I take AP Physcology or AP Euro. I’m going to be taking APUSH, AP Statistics, AP English Language, AP Calc AB, college French, and honors physics (my school does not allow us to go straight to AP Physics) next year. Also, I’m highly interested in going into the medical field, so should I take AP Bio or AP Chem instead of AP Physics?
Ivy League colleges want to see 4 years of the same foreign language, then rigorous classes in the other core subject areas.
For pre-med, I would take AP Bio or AP Chem, and then the other AP science + honors physics in senior year. I would also go for AP Psych, which is much easier than AP Euro.

The AP Chem class at my school is notorious for not having a good teacher with very low grades. So should I consider taking AP Bio next year and honors Physics in senior year? I am also taking into account the weighting each class has on my class rank since I am currently in the running for top 10.

If you want to avoid the AP Chem teacher, by all means take AP Bio and then honors Physics.
I would avoid APUSH and AP Euro at the same time. Both are time consuming with outlining. So AP Psych. Have you looked to see if Physics is a requirement for med school (it is for most DPT schools). I do not see the value in starting a new foreign language over taking the APs with the possible exception of Latin that might help you later, particularly if your school offers Honors Latin I which would continue to boost your GPA. Take the AP Bio next year and hold off on the AP Chem in the hopes that the teacher changes.

You should be able to handle the courseload, get your SAT/ACT studying done over the summer.
