I decided to drop AP Spanish LAnguage for next year. Would this be seen as ok by college adcoms? I'm already bilingual, I'm going to be a senior, and I want to focus more on things that I want to do. I'm thinking about a double major in philosophy and environmental studies, so I dropped language in favor of Environmental Science. I'm looking at a lot of local colleges, but some LACs as well.

Anyone? :D

Check with the Counselor's Office to see how your transcript will appear. I think it won't appear. Students change their schedules all the time before classes start. Why would your transcript show a class you never started? At my D's school, students even change classes after the school year starts and their transcripts only show the course they finished.

If you're already bilingual and you've taken Spanish for three years in high school - you should be fine dropping it (though your app would look better with a fourth year of language)
