Do foreign languages in high school have a integral influence on college applications? Do foreign languages in high school even matter, yet alone influence the rest of your academic career?

If you don’t have the level that a particular college require for admissions, yes it matters.

I understand this. Like for example, some colleges require two years etc. But what I am asking is if colleges prefer or are penchant to accept people who do a certain language.

Like, do colleges prefer than an applicant have taken Russian over Spanish? Generally, no. However if you were contemplating majoring in one of the less-commonly taught languages, your application may get a little more attention. That said, most liberal arts colleges do not admit by major, so it’s probably not a boost.

In addition, colleges generally frown upon you taking your native language as a foreign language, though its not a deal breaker.

Many high schools in the US offer limited choices of foreign languages, often just Spanish and/or French. So many high school students do not have much of a choice in which to take.

I think the popular ones are Spanish, French, German, Latin, Chinese, etc these days (in order of availability).
