Fulfilling IR/IA pre-reqs....

I intend to apply a grad program in International relations / International Affairs in the US (UCSD, Tufts, Columbia, Johns Hopkins, American) this coming January. Before I do so, I need to figure out how I will fulfill the maco- and microeconomics pre-reqs. Normally, of course, I would just take the classes at a school close to where I am, but the problem is that I'm in Taiwan, and I'll be here until sometime next spring. My Chinese is okay, but certainly not good enough to take classes in economics.

Most of the schools that I'm applying to don't require me to have fulfilled the pre-reqs before I enroll, rather that I assure them that I'll finish them before I start in the Fall. So, I assume, I could take the classes when I get back next summer, but that seems a little rushed.

One thing I have to look for is if one of the universities here in Taipei offers courses in economics in English, but otherwise, I'm wondering if taking online courses in economics from a place like U. of Pheonix would look bad on my application. That way, I could take the courses here online from Taipei.
