Yesterday the "non-western class" I was taking (Chinese Family and Religion) got cancelled, so I was left with 14 credits. The only class that wasn't full, or waitlisted, and looked "mildly" interesting was an anthropology class called "language and prehistory." Is there anyway to get into a class by speaking to the professor personally on campus? An RA at the orientation session told me this has proved useful many times before. I would've much rather been enrolled in Criminology or something like that (I'm currently on the waitlist). Any suggestions would be helpful.

If your class is restricted to a waitlist, then it really depends on the professor. Some will go for majors first while others could go by year or just go down the ranks of the waitlist.
