Gap year applying to college question

So last week I've withdrawn from the state university I was in, because of the courses I was put into.

I'm thinking of taking a gap year or 2 than attend a new school. I graduated college with a 2.54 unweighted GPA, 1540 SAT score, 5 on AP mandarine, 3 or AP psychology, and I've taken a macroeconomics class at BU this summer and received a 82 in the course. I also had a internship in a psychology lab in harvard. Work as a teachers assistant at a chinese school for 3 years

I was just wondering what are something I should do to increase my chances to get into a school such as UIC, SBU, Umass amherst, or Uconn. I plan to go get a part time job or two so it could look nice on my resume. Also thining about taking a few more class in a community college near by. Trying to find other internship. Should I also consider retaking my SAT?

I'm just very confused on what I should do to try and increases my chances
