so, im pretty much not going to get a C or better in my american studies class, and i was hoping to transfer later but was afraid that that would ruin my chances. but, american studies isn't even offered to where i want to transfer, so would it even matter if i get a d? how do the uc's calculate that?

UC’s only calculate transferable courses into your transfer GPA. If that course you took is transferable than it will be calculated, if not then it won’t. As simple as that. However you still have to list that course and grade when you apply in your application.

Is this course not offered or not transferable, there is a big difference.

if it is not transferable, even though you list it on the app, they dont look at it or care about it, it plays no role whatsoever in your admission to a UC.

If the course is not offered at your UC of choice but it is listed as a UC transferable course in your college catalog then it will factor into your gpa and be looked at.
