Getting an undergraduate / baccalaureate in the EU?

Any advice for a dual citizen (US/Spain) who is considering getting their undergraduate degree in the EU, taking advantage of their dual US/EU citizenship?

Would love perspectives from other US-based high schoolers/parents who made the decision to pursue the baccalaureate in the EU.

Additional details:

  • US-born and -residing
  • Currently in a top 8 US-based boarding school, 4.0 GPA (weighted)
  • Potential majors include Comp Sci, Environmental Studies, and Engineering
  • No APs; SAT will be taken this fall but trending towards 1500+ with self-study

Questions:

  • Are APs or other standardized tests necessary?
  • Is there a way to get something resembling a liberal arts education for someone who is interested in STEM majors?
  • Where you able to do a study abroard in the US?
  • Any helpful resources (sites, articles, etc…) you can share?

It really depends on the major and the country.
The only STEM “majors” with some “liberal arts” flexibility I know would be the Netherlands’ Liberal Arts Colleges (+ the ATLAS program a Twente), perhaps the Scottish universities (3/4 would be STEM core though).
The highly theoretical Polytechnique Bachelor’s involves a LOT of math with, after the 1st year, a choice of Economics, CS, or Physics; and some hours in Biology, Humanities, Foreign Language, and Physical Activity.
All these programs are in English.
