Getting into Grad School with low GPA (ECON)

I am currently a econ major at UC davis, and will be graduating this spring with a GPA a little under or about a 3.0 (depends how well I do)

I know my current GPA, and my course work (not enough math, stats etc..) is not enough to get into a grad school (master's program)

But my question is:

If I were to take classes at UCI, under Concurrent enrollment (taking classes at UCI as a non student) for a year and good grades (3.5+) on "core"/important econ courses, math courses, and maybe some graduate level courses needed to enter graduate econ programs, will this have a large impact on my chances??? (will schools even care I took these classes as a "non student")

Is it worth doing? because it is very expensive!

Will my undergrad gpa outweigh the classes I take at UCI, even though the UCI classes will be more recent?

I know there are other factors (personal statements, letters of recs, GRE etc...), but I was wondering if this would be the best way to make up for my lackluster undergraduate performance
