Good idea to improve my rigor?

I'm going to:

-Continue my current AP online course and perhaps enroll in another one
-Enroll in community college soon, start in January and continue going there for two semesters
-In the summer, go to Cornell's Summer Program
-Also in the summer, go to a UC and take several college courses
-Take five AP's senior year
-Perhaps continue online or community college course or two during senior year

Hopefully it will make up for missing 4/6 honors courses offered and 3/9 AP's offered.

Say I get an A- - A avg, would that boost up my transcript enough to make up for taking mostly regular courses earlier in my HS career?

Well, I don’t think you have to go that far all out. I do suggest taking as many APs as you think you can handle as well as a community college class or two. Most likely, maxing out and killing yourself will have more of a negative effect on your grades.
