So I was wondering, what is the ratio of MIT undergrads vs. other college undergrads in MIT's graduate program application and admission?

Well, in chem E and electrical engineering/computer science, if you get a 4.3/5.0 overall GPA then you are automatically admitted to the Master's program.

It's less common to go to grad school at the same place you did undergrad in math/science rather than engineering. However, I knew quite a few MIT undergrads who got into grad school at MIT.

In last year's graduating student survey (PDF here), 137 students reported that they chose to attend MIT for graduate school. This is likely a bit of an underreporting, since only about 70% of students responded to the survey.

So somewhere between 15-20% of the graduating class attends MIT for graduate school. More students, of course, got in and chose to go elsewhere.
