I want to graduate from my university early for financial reasons, but I will still be applying after my junior year. I've heard graduating early in the context of also applying early is undesirable, but in my case, I will be taking a gap year to work/volunteer senior year. Any advice would be helpful!

If you can spend that gap year working in something medically related, that could be fine. You get no brownie points for finishing early, it seems they like to see you taking full advantage of all the opportunities senior year, so if you can find something to do which does the same, that could be fine.
