I am planning to apply to Art History Phd programmes at prestigious schools next month: Columbia, Boston, Princeton and Chicago. I have had positive responses from the professors I have contacted, and am confident about my applications, and yet.....

I have just taken a practice GRE test and got a quant. score of 530. My verbal score was much higher, but the real exam is in less than two weeks and I have absolutely no hope of improving my quant. score before then (I have always been utterly useless at maths).

Should I give up hope of getting into my target schools? And if I do get in, will a similar score ruin my chances of getting TA jobs?

No, GREs are usually more of a formality and nothing that can't be fixed by just putting in more time and practice and retaking the test. At least your situation is better than the alternative, which is having good GREs, but being weak in your recommendations and other areas, since those areas take years to accumulate and can't be made up at the last moment once you're already at the end of college.
