Have we done a thread for main dish salads?

So, someone forgot to defrost the chicken for the slow cooker tiki masala for tonight’s dinner, so I washed some romaine, cooked the artichoke heats I have in the freezer, grabbed the last of the capers and sliced red onion from the fridge, ran to the corner deli for roasted peppers and fresh mozzarella, grabbed a handful of basil from the garden, and will be throwing last nights salmon into our dinner salad. I have 3 (adult) kids at home and I know 1 is going to be thrilled

This salad is quite filling and I have a lot on meatless Mondays…all year round.

Google “cornbread salad” for several variations. I love it but it IS not a diet salad, LOL.

Gonna throw this salad in here. I’ve made it 3 times this summer and it disappeared all times. I double it for more than 6-8 people. You could add chicken or bacon to make it more of a main dish.

Watermelon feta salad is not new but this lime dressing was new to me and I ate it three times this weekend! The watermelon I had wasn’t the sweetest but this dressing really gave it more flavor.

If you don’t like feta you could sub in a cojita cheese.

I posted on the Building a Salad thread that we often enjoy grilled romaine salad as a main dish:

and, sometimes, the crab stacks I posted on that thread end up being more than a heavy appetizer salad if other noshes are included.

DH and I do a very large tossed romaine and field greens salad for lunch almost every day filled out with whatever we have on hand but, usually, shredded carrot, shredded red cabbage, sliced celery, kalalmata olives, halved grape tomatoes, shredded or shaved parm, and slivered almonds. DH likes to add ham, I add red onion which he can’t have. We like homemade tzatziki for dressing.

I just made this for dinner last night and make it often. I usually use boneless chicken breast and add avocado to the salad. It’s an easy tasty dinner.

Grilled salmon salad.

Grill or sauté individual portions of salmon, brushed with olive oil and sprinkled with salt and pepper. (I usually use a well-greased grill pan for this.)
Place salmon on top of individual bowls of salad greens.
Meanwhile grill vegetables, tossed with olive oil, salt, pepper – we usually do some combination of cherry tomatoes, onions, asparagus, and bell pepper strips, but anything you’d want will work here. Grill the veggies separately so each person can choose what they want on their salad. You could also add sliced avocado, pine nuts (or pecans, walnuts, or whatever). Add toppings to individual bowls.
Add dressing of choice; we usually do a homemade dressing of chopped shallots, balsamic, honey, olive oil, salt and pepper, sometimes Dijon mustard.

I should have taken a picture. Tonight’s dinner was a green salad with mandarin oranges chicken and balsamic vinegrette, a caprese salad, and potato salad. It was the perfect dinner for a hot night!

Last night I made a simple salad to go along with some bbq I ordered for a get together. I saw the salad on Instagram and had all the ingredients at home so thought why not!

Not an exact recipe but here are the ingredients:
1 bag coleslaw
1 can chicken drained and rinsed (I used the nice canned chicken from Costco) - you could do rotisserie or otherwise as well)
Mayo to taste (whatever you like Hellman’s, avocado mayo, whatever!)
Fresh dill if you have it! Or dried. Other herbs great - I added some fresh parsley and a little small leafed basil. But dill is really nice with it
Chopped apple
Salt/pepper

Mix it all together.

It’s delicious. And sooo easy. Eat as is or on crackers or on a bun.
