Your ECs are good, but what might hurt are only 3 APs and the gpa.

low GPA, sub-2000 SAT, lack of AP classes, say goodbye to Stanford/Cornell for sure unless you raise that score.
Try to raise that SAT for sure, it will help you a lot. Your ECs are fine, and a 3.5 isn’t that terrible either.

I think that you won’t really have a shot at the ivies or stanford with a lower GPA and test scores that don’t make up for it. You definatetly have some pretty good EC’s and should emphasize your situation studying abroad and your unique ECs in your essays. I think that if you raise your SAT’s more of the schools would be in your reach. Maybe try the ACT if you can, because if you can do comparitively better than your SAT your chances at most on your list will go up drastically. I would try to add a super safetly or two on that list. The biggest thing that will hinder you is your GPA and it might be hit or miss on some of the schools with it. Good Luck, I am sure you will get into some on that list that you will be very happy about!

Your GPA is weak, and so is your SAT score. Also you need more rigor in your courseload.

So…
