Help me set up a more 'challenging' course load?

Hi guys!
I am in dual enrollment and am getting my associate of arts degree. I am trying to build a more challenging course load, and I need some advice on which classes I should take the upcoming semester.

For Math Classes:
I’ve taken statistics, but need to take another math. These are my choices:
Finite Mathematics (4)
Calculus for Business & Social Science (4)
Precalc (5)
College Algebra (4)
I’ve always been pretty good at algebra, but I’m not quite so sure how well I would do in calculus. I think precalc would look more impressive, but I don’t want to get a poor grade.

Humanities(need to pick 3)
Women in Literature
Intro to Shakespeare
Survey of World Religions
Ethics
Intro to Poetry
American or British Lit

Fine Arts(need 1)
Art history
Intro to art
Intro to humanities
Intro to music of the USA
Intro to theatre

Life Science(need one)
Principle of Biology (4)
Intro to ecology (4)
Anatomy and Physiology (4)

Social and Behavioral Sciences(need one)
History of middle east
U.S. History I
Intro to Anthropology
Racism & Diversity in Contemporary Society

Note:not all of these are for one semester lol

For NYU it would be helpful to include a course n personal finance.
