I’ll be applying to the Viterbi School of Engineering as a ME major.
I have a very solid EC in the field of economics.
I started an NGO where I taught underprivileged women microeconomics and finance to start there own self help groups. One of them even started a start-up under my mentorship and is now doing very well.
My question is, since I’m a ME major, will this reflect negatively on my application, since the AO’s will think that i have no interest in engineering and more interest in economics ( i have above avg EC’s in engineering also but not as good as the one mentioned above) or will this reflect positively showing that I am an all rounder, who has a passion for both engineering and economics?

In my opinion, it is a positive because it shows you have a desire to diversify your knowledge. Colleges seem to value the well-rounded these days over the savant who spends 24/7/365 on one discipline. I would make sure in the other parts of your application you demonstrate your interest in ME. Just make sure you do a good job selling yourself.
What are your math-sci ECs? If you have none, adcoms can question your interest in engineering and whether you have the attributes for it, including the right mindset and energies. Your competition is all those kids who did pursue their interests.
No, they dont want unilateral. But they do want to see the right choices and commitments for what you claim is your direction. (Same as they need to see the right rigorous classes.)
