Help! No research!

I have a major problem. I want to apply for the Moog Fellowship to WashU at St. Louis, but the main 750 word essay prompt is:
Describe a biology or chemistry reading or research project in which you have recently been engaged or would like to undertake. (If you choose to discuss a large research project in which you participated, do so in a manner that will permit the Moog Committee to assess your own contributions.)
I haven't done any research. I live in an academically anemic little town in SoCal where you're considered the cream of the crop if you have a weighted 3.5, where the closest research universities/institutions are two hours by car in either direction (north or south). What do I do? Do most people do research in high school? Am I horribly behind? Is it too late to start one?

I could write about a project I 'would like to undertake,' but I don't know if it's appropriate to talk about projects I've read about at other schools or what.

Why not call the school & ask? Explain your school's situation & ask for guidance. Candor can be the best approach.

Well, it does say OR WOULD LIKE TO UNDERTAKE, so you don't have to have done one. Your competition many be stiff, however - my son did a research project in H.S. that was presented (with his mentor as co-author) at an international symposium......
