Help! Which AP Class should I take?

We're registering for classes next year and am in need of help of which AP class to take. I'm freshman at the moment so I'll be a sophomore next year. There's a school I'm trying to get in to called North Carolina Science and Math (NCSSM) which is apparently difficult to get in. I would really have to sell myself since I live in one of the competitive regions in North Carolina applying for the school. I'm required to take an english, math, science, and social studies. They let us take 1 online course on top of the 4 classes every semester. Here is what I'm hoping my schedule will look like:

Health Science 1 (This is a required class in my school)
AP Environmental Science (My Science)
AP Calculus (My Math) Year-long class/Counts for 2 credits
AP Stat or AP Bio (An "Elective") Both are year-long classes/2 credits
AP Psychology (My Social Studies)
English II Honors

That's 8 credits in total. So, there's also an online class I'm available to. Since I want an AP class, which is year-long, I can only take one. My questions are:

Since I'm only allotted to either AP Stat or AP Bio, which class should I take considering I have the other AP classes?

If I choose either AP Bio or AP Stat as the online class I'm allotted to, which one should I take considering I have the other AP classes?

Do you have any suggestions to what AP class I should take asides from AP Stat or Bio? (AP Human Geo, AP World History, AP European History, etc.)

Which AP class online would most likely be the easiest?

Also, the clubs/sports I am doing next year will also take some of my time. Please take that to consideration (: My clubs/sports next year will be:

Taekwondo
Student Body Government (President)
HOSA
AHEC
Science Olympiad
Yearbook

I'll also be volunteering somewhat. Thank you in advance!

AP Bio would he taken more seriously by the school. AP stat is easy.

AP human geo is a really easy AP and should be no problem online.

self-study ap stats and take ap bio at school instead.

The best APs are AP bio, AP Chem, AP Cal I, II , AP physics C ( the other also ok), AP Macro, Micro. After that there are others you can take of course but AP psyc, enviro, those are easy ones.

I’ve never tried self-studying. How difficult is it? After you take the AP exam, what does it look like? Do you get the credit or what?
