I have a hard time coming up with examples for the essay. How do you guys approach the prompt and come up with such great examples? I got an 8 on my last sat essay, so this time I'm just hoping to get higher than that

Almost two in three prompts contains a topic for which anecdotes can be cited from novels. That's how you get your first.

For example, I've pretty much memorized three classics for my SAT: Great Expectations, the Scarlet Letter, and Pride and Prejudice.

The second example should preferably be from either history or literature again. If you can't think of one, then go for a STRONG personal example. Not the common crap students come up with, it should be different and awe-inspiring.

Whatever you do, don't go for purely scientific examples as some readers hate them, or at least don't find them interesting enough.

I draw my examples from these:
-The Grapes of Wrath
-Greek Mythology
-US History Textbook

I also have a sheet of paper where I write down interesting stories from the news that I can use to support my thesis (personal examples)

I'm not a huge reader (probably one of the reasons why I suck at CR), I haven't read any of those books lol. I've only read the ones required for in highschool.
