I'm a junior in high school right now and am considering an econ major in college. Obviously it helps to have taken econ in high school, but will it seriously hurt you if you don't?

Not at all.

Not taking econ in high school will probably help, at least that's what I was told by professors from George Mason and The University of Chicago, on two seperate and unrelated instances.

My econ class in high school was a joke when i took it. The things you cover in college are not the same in that you can much more in depth. The high school courses are usualyl a semester long and cover both macro and micro so it is only a survey course. Then again I have a friend who took the class in high school and studied on his own afterwards and took the AP Tests in Micro and Macro and was able to get 5's on each. So, perhaps you learn enough to test out of the basic stuff in college.
