I am currently a sophomore and I am taking French II. My plan was to take French III in my junior year and French IV my senior year, but that may not be able to happen. Due to lack of interested students, French IV is a course that is not always offered at my school. I really want to take French IV at school, but I just know that there are not enough students that will be interested in taking the course. The colleges I am interested want four years of a language... What should I do??

If your HS does not offer the class, colleges will not hold it against you. For the moment, don’t worry about what may or may not happen. Move forward, and if French IV ends up getting cancelled, then you can explore other options.

That is a huge relief. Thank you @skieurope
