Most graduate school history programs require knowing 2 or more languages. Areas such as Eastern European History and Ancient history often have 3 or more as a prerequisite. How is it possible to learn this many languages at the undergraduate level?

You don't have to know them as an undergraduate, but will have to know them to get your Ph.D. this means that as part of your graduate coursework you will need to take language coursework to become proficient in languages. If you are still an undergraduate a good way to start this process is to study abroad for at least a semester in a program that offers intensive language study in your host country but offers outher coursework in English. In this way you can take coursework needed for your undergrad degree and begin the process of learning a new language. Just make sure that you can continue the language study at your home or a nearby college when you return.
