Is there really anything in terms of job/postgrad that I can do with one but not the other?

The hard skills you will learn are similar: reading, research, writing, critical thinking, etc. Honestly there are hundreds of job titles you could hold with either degree and would be suitable if you desire to work in sales, government, non-profits, researching/writing, legal, etc.

However if you want to go into field and it dependent on the a particular course of study then of course go with that discipline. Say you want to to work in museums, archives, or some sort of public history capacity (which I’ll add the job prospects are slim without post-grad study) then a history major would be suitable. Similarly, if you wish to work in a global environment, international banking, or whatever international studies majors are geared toward, then go with that.

Good luck and continue researching the possibilities.
