I mean, an Honors level Calculus course would use a book like Spivak or Apostol, and an Honors level Mechanics class would use a book like Morin or Kleppner/Kolenkow. Do Honors Biology, Chemistry, etc. classes have analogously similar textbooks?

I took an honors level chemistry class and we used the same textbook as the non-honors classes.

Granted, it was below the level of what we were actually learning and thus very few people actually used the book, including the professor. :P

Our local school district uses the same college-level textbook for AP Chem that the state university uses for general chem (Zumdahl - Chemical Principles), and uses a high school chem text (Wilbraham, Staley, Matta, Waterman - Chemistry) for non-honors chem classes.
