switch from AP English to Honors English for my second semester. The class is ridicoulously hard (read 2 books in 2 weeks, meaning u read 1 book with the class and 1 book out of class on ur own), tons of essays, etc.

I am taking a tough courseload this year:
AP Calc AB
AP Calc BC
AP Euro Hist
AP Environmental Science
Environmental Science lab
Honors Chemistry
Computerized Accounting
and AP English 12

so after I send in my app and decide to switch to Honors, will they look at it badly?

btw I am in-state, will take 8 APs by graduation (excluding the english, with english it will be 9), 4.7 GPA, 1940 SAT, 2 leadership positions in clubs (one is president), NHS, DECA 1st place in state.

I don't know about Chapel Hill, but my son considered dropping an AP and taking an honors his second semester after being accepted at Wake. After calling Wake, they said that they would possibly rescind his acceptance as his schedule did not remain as it was when he applied---so he stuck it out. You might want to call and check.

this is a big no no in college admissions - you never want to drop an AP class in exchange for an easier course (unless you're currently failing, but that doesn't seem likely seeing that it is early in the semester).

I'm a North Carolina resident who was admitted to UNC early in my senior year. My application showed that I was taking a year long AP Calculus AB course. However, at the end of the first semester of Calculus I decided to change to AP Statistics due to the incompetence of the Calculus instrutor. I didn't want to waste another semester. I ended up getting a warning letter from UNC that bascially said that my senior year course load wasn't as impressive as my application indicated and to be prepared to the rigors of college.

my mother is an alum and gets the carolina alumni review. there was an article about admissions and a quote from an admissions officer specifically saying that they would rather you take the harder course and get the lower grade then take the easier course. by the way it sounds its going to be tough but i would stick it out if at all possible.

This is all conjecture. I only took one AP in high school and I got into UNC (C/O 2010) so no one is to say you shouldn't drop a course because you have a lesser chance of getting in. DON'T get a C in AP, it looks bad. Might as well take an honors course in place of it.
