I’m going to apply for Mathematics/Physics at GeorgiaTech for the class of 2021.
However, if i decide to change my mind to change to engineering, how easy/difficult will it be?

Assuming that you’re an incoming freshman for fall 2017, you are allowed to change your major as many times as you want before the first day of classes.

I think Computer science is the one major that you may need to act quickly if you want to change, but most other engineering majors should be able to change into them in the first year. You can change between engineering majors easily though, there is even an undecided engineering category at FASET. The requirements per major make it hard to finish in four years, if you wait more than a year to change your major. Computer science appears to be the most crowded major, but industrial engineering and mechanical engineering are very large too.

Admitted freshmen will not be allowed to submit a request for a change of major until after the deadline for withdrawal from classes with a W grade in the first term of their enrollment. The change would be effective for the second term of enrollment. This includes a change of major within the student’s current College. For freshmen admitted for Summer, the restriction is lifted after the withdraw deadline of their second semester of enrollment. All other restrictions also apply.
I asked my admission counselor this question as well. He replied today and said, “…students must remain with their initial major until fall of their freshman year.” My initial major is Physics and I would not be looking to move into Engineering or Computer Science.
